Two gloriously sweet, albeit short, vacation days were all I needed to get energized. My energy source was not pennsylvania energy but the Horseshoe Bay Resort. Snagging that great Easter hotel deal proved to be a smart decision. It was so much fun just lounging around doing absolutely nothing, except to watch my little girl have her own dose of energizing fun in the resort pools. I just love spending quality time with my family. I am already looking forward to our next family bonding time in and out of town. :)

Who is up for a Monster Migas Plate challenge? Whether you have  fixed life insurance rates or not won’t matter. The bottom line us, you should have life insurance if you intend to finish this tray of food! This is seven pounds of eggs, cheese, pico de gallo and corn chips. As if that weren’t enough, you also get a side of refried beans, home fries and tortillas. This is definitely one of those man versus food moments! Sorry, but food will have to win. A two-egg omelet is all that I really need. :)

The next best thing to  us mint coins are coins we can actually eat. *wink* So they don’t make jingling sounds! That’s fine with me. I had the hardest time looking for gold coins when I made this Chinese New Year-themed cake. I sent hubby everywhere in search of these coins. In the end, he found them at a party supplies store. You won’t believe how happy that made me! The other alternative was to make the coins out of gum paste. That was not an option because of time constraints. I’m glad the cake gods were on my side. Cha-ching!  Cha-ching!

This was the birthday cake I made last year for my daughter’s teacher. It was only a few weeks into the school year and I haven’t really gotten to know the teacher all that much just yet. My daughter did tell me her teacher loved chocolate and the color red. This was not my best work but I can only do so much for an hour…or two. I still think it’s ok looking coming from someone who grew up thinking she’ll be wearing a lab coat to work when she grows up. Haha. Excuses excuses. :)

Love these pearly whites? Hee hee. :) It wasn’t too long ago when my little girl’s “Tooth Fairy” was scrambling (Yes, scrambling! Believe it or not!) for ideas when she realized she was soon going to receive the historic first tooth from her ward. What’s the going rate for a tooth? The first tooth? Should she use fairy dust? A wise (that is, more expereinced) Tooth Fairy said she gave her sons  a silver dollar for the first tooth they lost. It was too late to buy morgan silver dollars when she got the suggestion. So she just ended up rolling 3 dollar bills and tying curly bows around it. She left a note as well. It was so much simpler where I come from. No Tooth Fairy! Haha!
