Teacher Appreciation Week was in the first week of May.  One of the favorite snack’s of my little girl’s teacher is brownies.  So instead of bringing cupcakes to school for the class party, I brought brownies instead.  These brownies were quite big at 2.5in x 2.5in.  I have to confess, I made these from a boxed mix. :P  Thank you, Duncan Hines!  I did tweak the ingredients a little and I made the chocolate frosting from scratch.  I get points for those, don’t I?! :)  I like soft, moist ad fudgey brownies.  Don’t you dare bring up the topic of Lipofuze now! :P

It’s a long pig-out weekend for us! Yipee!  By the end of tomorrow, I’ll probably regretting every bite I’ve taken and pondering whether it is in my best interest to take a 7 day slimming pill. Boo! Having said all that, I’ll still go to a pizza buffet with my family later today. Ha!

Now, on to the real topic of this post.  I made my first “anniversary cake” for a couple friend of mine (and hubby’s!) some two weeks ago.  It’s an updated version of their wedding cake…

After a wee bit of hiccups while making the cake, I’m happy with how it all came together. You can read more about this cake HERE.

I made the above dish – Beer-Marinated Shrimps as part of a blogging assignment. I actually refer to it as Beer-Bathed Shrimps. :)  I’ve cooked shrimps so many different ways but this was the first time that I ever used beer.  And guess what, I liked it!  I will have to use beer for cooking more often.  This dish makes for a perfect bar food.  I can imagine enjoying this with refreshing drinks in my imagined recreation room complete with billiard table and billiard supplies.
