I know winter is so last season but last winter was one of the most fun winters we’ve had since we moved to the US. For the first time, we dared drive to New Mexico with friends. It was the longest drive we ever had to take. We stayed in the Land of Enchantment for almost a week. While Albuquerque was our base, we visited Santa Fe as well…twice! That’s where we had super fun sledding.

I’d have preferred that my daughter wore a helmet, even a miller welding helmet but… I went down the sled on a snow disc, too! I did it thrice! I could have gone a few more time but after I broke one snow disc, the kids didn’t want to lend me theirs anymore. Huhu.

We hope to visit New Mexico again in the near future.  ;)

A girl friend of mine asked me to make a birthday cake for her husband the weekend of Chinese New Year 2012. Naturally, she wanted a cake appropriate for the Chinese New Year. That was a busy weekend for me, but I just can’t say no to a friend.  So I said yes.  This was the cake I came up with…

It’s a cake decorated with auspicious symbols. And because it’s the Year of the Dragon, 2 dragons found their way to the cake. I have to say, I love how this cake turned out.

I made 3 cakes that weekend, all special requests by friends. I got them all done on time. The best part, I didn’t have to go to a laser spine institute afterwards. But I tell, I slept like a baby after they were all done. Haha! ;)

Spring. Now is probably the best time to check if ski jackets at PeterGlenn.com are already on sale. Haha! I made this pink and purple garden-themed cake in September last year per the request of a friend. It’s for her daughter’s first birthday, just the perfect occasion for a custom cake. This was a fun cake to make and relatively easy too. All I needed really were my cutters, except for the mushrooms and the girl figure. It’s one of those days when everything just goes according to plan. :)

It’s Spring Break! Threat of heavy thunderstorms yesterday and today did not stop us from driving to Houston for an overnighter. Dallas and San Antonio have been our go to cities for weekend getaways. We thought this time around, we should give Houston some special attention.

We went to the Downtown Aquarium and the Space Center Houston. We stayed at what has now become our favorite hotel chain, at least for the moment, the Homewood Suites. Oh and the bingeing! We ate so much in two days! I won’t be surprised if tomorrow I catch myself thinking about lipo and asking myself, “Does lipo30 really work?” Haha!

One night is too short a vacation. But vacations almost always are too short!

Would you look at that! My first attempt at blogging on the road! Thanks to the wonders of technology and an unlimited data plan, this post will get published as we drive home on a highway that’s thankfully smooth as quick step flooring.

I type at a respectable speed on a desktop keyboard. I can’t say the same about “tapping” with my two thumbs on an IPhone. Plus, the IPhone second guessing the spelling of every word I tap is slowing me down even more. That said, I’m thankful I’ll make my deadline. *wink*
